Deactivate Surrond Sound in Audio Settings -> None: Never use surround sound.

Will it only be stereo-output from HDMI then?

Optional BT1 RCU could help you in this case and control volume of all devices.

I have that remote.

If a programme is available only in surround 5.1 will it be converted automatically to stereo?

If you have the BT1 remote it can be programmed to control the audio on the TV directly. See the remote configuration app on the home-screen. I used that to configure the remote to control my Sony TV directly (and therefore the soundbar). Once you have configured it this way you can still mute the output on the Formuler box using the button on the bottom right of the remote with the 4 dots which will toggle the audio output from 0->100% and back again.
