What kind of device are you using to record? Did you try with some other device?
Did you start recording manual or scheduled recording trough epg? If scheduled trough epg, do all epg data match? Maybe their is need to change from Normal epg to UTC epg and offset. Please check.
If you let MOL2 working in background and change to plex, the recording should work. What are you doing with plex in this time waiting for mol2 to record?

Streaming 4k films mostly on PLEX.
I know, but do you use the same USB device for recording with MOL2 and Plex for streaming or for Plex some NAS or similar?
Ok, try next time with starting plex first then MOL2 and holding menu 2 sec to change between the app.
